This recipe comes from our daughter-in-law, Amanda. We were in a coffee shop out west on a ski trip, I saw these in the case with baked goods and commented that I hadn’t seen those before. Amanda shared with me that they are a popular item in healthy food prep and she shared her recipe with me. Originally this recipe was posted on my former SQUARE SPACE platform. When I changed to GHOST, this must have been neglected when reposting recipes. This weekend we were on the go and it seemed like a good idea to take this with us for snacks. They were a welcomed treat.

Think of this as a basic recipe and you can switch out your favorite add-ins like dark chocolate chip, your favorite dried fruit and/or nuts. I like to make a batch, place a few in a cake dome on the counter, those we will eat in a day or two. and the rest in a container in the freezer to be taken out as needed.
Protein Balls Recipe
Ingredients
-1 1/2 cup Old Fashioned Oats
-1 cup natural peanut butter (you could also use almond or cashew butter)
-1/4 cup of maple syrup or honey
-2 scoops protein powder (I use chocolate, but vanilla or coffee would be good too)
-1 teaspoon vanilla
-If mixture is too dry, add a teaspoon or 2 of milk, thickness of peanut butter will determine this.
-Your favorite add ins, 2 Tablespoons dark chocolate chips, 2 Tablespoons unsweetened coconut, 2 Tablespoons Walnuts or 2 Tablespoons dried fruit. Add more or less depending on your interest.

Method
1. Measure all ingredients out and place in a larger mixing bowl. Stir with a pliable spatula or your favorite kitchen mixing utensil. Depending on the consistency of your peanut butter this could talk a little time to incorporate all of the ingredients. If the mixture is too dry, add a little milk as needed.
2. Once mixture is blended, use an ice cream scoop or melon baller to shape into balls. If you do not have one of these, roll into desired size with clean hands.
3. Place balls on a parchment lined cookie sheet and let sit in the freezer for. About 1 hour. At this time or after, store in an airtight container, keep a few out in a cake dome or other serving container and freeze the others until desired use.
