Today, I was tired. Originally I had planned to re-post a former favorite Marvelous Monday recipe Algrodolce Purple Onions.  That’s a great recipe (you can find it here on the website) and we’ll be having it for dinner tonight with Chicken Noodle Soup made with Orzo pasta. Anyway, at Kroger I’m thinking about something good and very nutritious for lunch and I thought, “THIS is a perfect Marvelous Monday!”  I remember that I had some canned salmon (canned tuna would be a good substitute).  A lunch with some good protein, lots of protein and a nice combination of vegetables, YES, that sounds great!  Here’s what I came up with.  Now, the amounts are very much based on my favorite flavors, so feel free to take out what you wish and adjust to your likes…

I like a salad with lots of protein. This one is a winner!

Ingredients

-1 can of salmon or tuna (I used a 5 ounce can)

-a handful of fresh parsley (I used Italian Parsley-either is good)

-1 Tablespoon of thinly sliced purple onions

-1 Tablespoon of chopped bell pepper (any color)

-1/2 can of cannellini beans rinsed

-red wine vinegar

-extra virgin olive oil

-freshly ground black pepper

-coarse salt

-a few cubes of fresh avocado

-crumbled Feta cheese

A perfect lunch served with homemade sweet tea made with agave.

Method

1.  Prepare all ingredients, except for avocado & Feta cheese.  place      in a bowl and stir.

2.  Drizzle olive oil, red wine vinegar and stir. Season with salt and      pepper to taste. I like to add the cheese & avocado last since they      are a little soft.  Enjoy!
