In the Broadway musical, “A Chorus line,” which very vividly tells the story of a group of dancers, each trying out for the chorus line of a musical, each actor tells “THEIR STORY” and there is a scene where one of the characters tells the story of how he became interested in tap dancing when his sister didn’t like her dance lessons so, his Mom took him when he said, “I Can Do That” which is the name of the song her performs to tell his story.

     Every once in a while, I find myself thinking of that song when I go somewhere and have something to eat, try to figure out what the ingredients are and I’ll say (to myself), “I Can Do That!” And that’s where we are today with today’s Marvelous Monday selection. Always something simple, something good.  

     Individual Egg White Frittatas were on the buffet at a breakfast while we were traveling not too long ago. A Frittata is an egg dish that is usually cooked in a sauté pan or in individual muffin/cupcake tins (or in a ramekin/custard dish as shown above).  A Frittata differs from an omelet in that both sides of the frittata are cooked, where as in an omelette, usually only the underside of the omelette is cooked before it is folded over.  Also, the ingredients of an omelette are just gently whisked and the Frittata mixture is whisked vigorously so that the mixture is very fluffy, almost custard, soufflé like.  

     There are so many options and opportunities to use Frittatas.  They can be just baked and eaten when ready for a simple breakfast.  They can be prepared, let cool and then frozen to be defrosted and then heated to eat on the go or simply for a later time or snack.  And yet another idea, is that this is an excellent way to serve an egg dish for company or a holiday.  Also, here is the basic recipe, you can add your favorite ingredients or what you have on hand ranging from spinach, grape tomatoes, onion, feta cheese, cheddar, fresh basil, parsley, rosemary, minced ham or turkey sausage.  Another option is to serve mashed avocado or a spoon of salsa.  These are easier than you think and they are just so versatile.  Makes 12.  Double for more servings. YOU CAN DO THIS!

Ingredients

-1/2 cup quartered grape tomatoes

-1 cup chopped fresh spinach

-1/4 cup of your favorite cheese shredded (or crumbles of Feta)

-1 Tablespoon of your favorite herb/what’s on hand.  Basil, parsley, chives

-2 1/2 cups egg whites 

-1/2 cup finely chopped ham or turkey sausage

-sea salt to taste

-freshly ground black pepper

-For garnish, mashed avocado or some salsa to spoon over

Instruction 

  1.  Preheat oven to 350 degrees and spray muffin tins with cooking spray.
  2. Divide all vegetables, herbs, meat and cheese into the 12 muffin tins.
  3. Pour egg white and a little sea salt and freshly ground black pepper into a large mixing bowl and whisk until somewhat fluffy.
  4. Pour, somewhat fluffy, whisked egg white mixture into each of the 12 muffin cups.
  5. Bake for 20-25 minutes.
  6. Remove from the oven and let cool for about 5 minutes before loosening each frittata with a knife to remove from muffin pan.
  7. Mini Frittatas are now ready to serve solo or with some mashed avocado or a teaspoon of salsa on top.
  8. To freeze, transfer fully cooked and cooled Frittatas into an airtight freezer bag and store in the freezer for up to 3 months. 
  9. To reheat frozen Frittatas, microwave until thawed or for 45 seconds and serve with desired toppings or no toppings.  Another option is to take out of the freezer the night before, defrost in the fridg in a ziplock sandwich bag/container and just briefly heat in the morning to start a Great Day 🍴
