Not long ago, one of the most popular influencers, Bethany Frankel, of the Housewives of New York recommended a chicken salad she purchased at a little grocery store in the Hamptons, the Round Swamp Market. She raved about it on her social media accounts and it became an over night sensation. WELL, apparently, Bethany was a little ‘bumfuzzled’ that Round Swamp didn’t go out of their way to show Bethany their appreciation for “selling lots of product” as she is used to getting recognition or monetization when she gives a not to an item. She actually WENT to the market to make an appearance (and a scene) to confront the owners. Really? Bethany do you really need to do this?



Just giving you the backstory on the Chicken Salad.
Anyway, not being on Tick-Tok, I heard about this chicken salad somewhere on Instagram. Bethany sure gets credit for being an entrepreneur, a creative businesswoman, beautiful, in shape and able to make the most of her ability to make $$$ based on her number of followers. However, her handling of this situation makes her less credible in my mind. What’s wrong with just mentioning when you come across a good product, restaurant or business?
Back to the salad. Many foodies have come up with Round Swamp Chicken Salad ‘dupes.’ Since coming across the first chicken salad recipe, I have tried a few and here’s what I have come up with taking the best/or at least my favorite ingredients from each one and coming up with my version. I size up Round Swamp Market as a place similar to Ina Garten’s Barefoot Contessa (which she sold a while back). Both Ina and Martha Stewart as well, have made mention of Round Swamp. One of my granddaughters gave this one a two thumbs up. I think you’ll like it, as it pairs well with many different sides or it could be served with bread as a Chicken Salad Sandwich. What makes this unique from most chicken salads is the whisk used to mix this salad on the stand mixer-I had not heard of that. Also, I make my own mayonnaise. Recipe below as well-made with boiled eggs, but feel free to bring out the Helmanns or Dukes as one the DUPE recipes I came across. Oh, and I don’t expect anything in return from Round Swamp Market (or anyone else I mention). I’m not that important…Enjoy!

Hamptons Summer Chicken Salad
Ingredients-(approximately 5 servings)
-1 rotisserie chicken (skin removed)
-2-3 stalks of celery
-1 small shallot, peeled
-¼ teaspoon black pepper
-1/4 teaspoons sea salt (or your preferred salt), you may wish to season more.
-¼ teaspoon onion powder
-2.5 teaspoons rice vinegar (also known as Rice Wine Vinegar)
-1/3 cup Mayonnaise I like to make my own (but use your favorite). Some recipes prefer Duke’s mayonnaise. My mayonnaise recipe (made with hard boiled eggs, is posted below).
-A handful of freshly chopped parsley

Method
1. Remove the chicken from the bones and place in the bowl of a stand mixer (a hand mixer can be used as well), with the whisk attachment. Blend on low speed until the chicken breaks up into fine shreds.
2. Using a grater with medium holes, grate the celery and shallot, into fine pieces (discard the strings of the celery that may be left behind after grating it).
3. ON low speed or by hand stir the celery and shallot into the chicken shreds and then sprinkle in the pepper, onion powder and salt (to taste).
4. Drizzle in the rice wine vinegar and then add the mayo and stir everything together until combined.

Homemade Mayonnaise prepared with hard boiled eggs


My blender came with a smaller container and blade that attaches to smaller container. It’s perfect for sauces and mayonnaise.
Some people prefer not to eat raw eggs. That’s a valid concern. Sooo, I came across a recipe made with hard boiled eggs. Here you go.
Ingredients
-5 hard boiled eggs (I salt the water when boiling eggs for approximately 10 minutes. Cool by running cold water on the eggs in the pan.
-4 Tablespoons extra virgin olive oil (or avocado oil)
-2 Tablespoons lemon juice
-1 Tablespoon Dijon mustard
-Optional; 1 Tablespoon water for a looser consistency
-1/4-1/2 teaspoon salt to taste
Method
- Place all of your ingredients (except for water and salt) into a high powered, small Nutribullet blender. Blend until smooth.
- Add 1/4 teaspoon salt and turn on blender again. Sample and decide if your mayonnaise needs more. If the mixture is too thick, add water, a little at a time.
- Store in an airtight container (preferably glass, like a jam jar), in the fridge for up to 1 week.
